They both have lots of nutritional value, are simple to prepare, and make for delicious eating. So add a little variety to your menu and try them out. Let me know what you think. Millet Millet is rich in magnesium, phosphorous, iron and vitamin A. It is considered to be a good "brain food". It is recommended in particular for depression, intellectual fatigue, pregnant women, and to reinforce the immune system. Recipe: Rinse millet thoroughly until the water runs through it is clear. Heat in a heavy pan until the millet is hot to the touch but not brown. While the millet is dry roasting, bring to a boil one and one half to one and three quarters volume water. Pour boiling water over the millet. Cover immediately with a tight lid. Simmer for 15 minutes. Let sit for another 15 minutes. Fluff with a fork. Serve with vegetables or use to make your own millet/vegetable patties. Season with vegetable oil, yeast flakes and tamari sauce. Accommodates well with ratatouille. Buckwheat Buckwheat is very high in calcium, magnesium, phosphorous, fluoride, and vitamin P. Vitamin P strengthens the blood vessels. Buckwheat also contains a number of important amino acids; in particular tryptophane and syntonine were thought to exist only in animal proteins. Buckwheat is very nutritious and is particularly recommended for the nervous system. Recipe: Rinse thoroughly until the water runs through it is clear. Cook like spaghetti in boiling water for 10 minutes. Do not over-cook or it will get mushy. The kernels should be open but still slightly firm when cooked. Serve hot with vegetables or cold like a salad. Add raw carrots, celery, onions, olive oil, parsley and tamari sauce or salt. Delicious! |
